Super Bowl Spread

The Super Bowl gives us all the reasons to eat the yummiest snack foods (and make a cocktail on a Sunday afternoon)! Here are a few of our favorite recipes! Peg Legs: These are a family favorite! One of my husband's family traditions every Christmas Eve is to bake these, along with tamales. I quickly fell in love with them, and they are now a Super Bowl tradition for us! Ingredients: 3-4 pounds of chicken drumettes 10-12 tbs of taco seasoning 2-3 c. bread crumbs 2 tsp. salt (if not included in taco seasoning) 2 eggs 1/2 cup of milk Creamy Chipotle Chile Sauce (recipe follows) Directions: Preheat oven to 375 degrees. Whisk eggs and milk in a bowl. Combine taco seasoning, bread crumbs and salt in a Ziploc bag. Shake and taste for seasoning. Place drumettes in egg wash to coat, then add drumettes to the Ziploc bag with bread crumb mixture. Seal tightly, and have your little shake the bag to cover the drumettes. Line a baking sheet with aluminum foil and evenly space the drumettes onto the foil. Bake for 45 minutes or until cooked through. Serve hot with the Creamy Chipotle Chile Sauce for dipping. For the Creamy Chipotle Chile Sauce, combine 1/4 cup mayonnaise, 1/4 cup sour cream, 2 teaspoons canned chipotle chiles in adobo, 2 small garlic gloves (pressed), 2 teaspoons minced fresh cilantro leaves, and 1 teaspoon fresh lime juice. Cover and refrigerate for at least 30 minutes before serving. Jalapeno Popper Sliders: These are by far our favorite sliders! We first had them at a Rachael Ray SXSW party. The cool cumin cream cheese paired with charred fresno peppers and Hawaiian rolls are the perfect combo. We have made them time and time again! Click here for the recipe. Fancied Up Pigs in a Blanket: This classic recipe gets dressed up with a honey-dijon-mustard-brushed-puff pastry and sprinkled with poppy seeds. We like to pick up sausages for these from our local Salt & Time butcher shop and salumeria. Click here for the recipe. It wouldn't be a party with out a cocktail!
